The trial is for accounts on Free that have never had a trial or a subscription. It is one trial per inbox: variants of the same email address (Gmail dots or a +tag) count as the same person.
If you already had a trial, you subscribe to a plan directly.
Click the gear at the foot of the rail and open Plans
On the Plan tab, choose monthly or annual and click Start 7-day free trial on the plan you want
Enter your card details at checkout (you are not charged today)

When you open a feature that needs a paid plan, the page tells you the plan, its price and that it comes with a 7-day free trial. Click Start free trial to begin right there.
A Free trial card at the foot of the sidebar counts the days left
Subscription > Overview shows 7-day free trial, the date the trial ends and your first billing date
To start paying early, click Start subscription (on the sidebar card or on Subscription). The trial ends, the plan is billed today and its monthly credits land right away
Picking a different plan on Plans also ends the trial: you are charged for the new plan straight away
